Ingredients (yields around 6 servings):
1 up brazil nuts
1 and (just under)1/4 cups dates
1 cup unsweetened shredded coconut
1/4 cup oats
1/3 cup cocoa
1-2 tsp agave
Teeny tiny pinch of salt
Pop your brazils and salt in the food processor and blend until chopped small but not completely powdery. Gradually add your dates and blend blend blend. Now add you cocoa, oats, coconut and agave and blend some more - don't over blend it at this point, you want it to be just mixed.
Now grab a spare lunchbox or plastic food tub and squish all the yummy cereal mixture into it - you want to pack it down pretty tightly. Pop the lid on, store it in the fridge and then use your spoon to hack it out when you want a bowl - this way you end up with some big yummy chunks and some smaller bits too! Deeelicious!
I serve mine with a chopped banana and soya milk - it's also really good as an ice cream topping, a layer in a sundae style dessert, as a mix in with overnight oats.... or just eaten in massive handfuls straight from the food processor. Enjoy!

ReplyDeleteLilLipstick - it really is amazing! That was my aim with it - I love having a chocolatey cereal to eat in the morning but they're normally just full of rubbish and bad things.
